Personally I use my backup drive for more than just backup. I have mine connected to a server and use it for network storage as well.
Since I want to have extra room on my USB hard drive I only back up my documents and settings (easy to do with a Apple PowerBook G4). I backup once per day and have had to use that backup multiple times.
If you have documents, settings, programs, files, and anything else on your computer that is crucial to your business, don't trust your internal hard drive alone. Then tend to fail, then data recovery gets expensive.
An external hard drive can save you thousands of dollars if you end up needing a data recovery service!

You could also consider an online backup service like Mozy, which is free :)
With an online backup service you have the extra benefit of the fact that the backup is off-site, so in case of a fire or theft you still have your backups.
Unfortunately it is not available for Apple users...
